After an inspirational visit to the Daylesford Chocolate Mill, here is my family favourite chocolate chip cookie recipe. This time though, I have used gluten-free self-raising flour, instead of regular self-raising flour, and the result was amazing!

Ingredients:
120g butter
½ cup caster sugar
½ cup brown sugar
1 egg
1 tsp vanilla paste
1 ¾ cup gluten free self-raising flour
½ cup of raw organic cocoa
½ tsp of baking soda
pinch of salt
½ cup chocolate chips
¼ cup chopped walnuts (optional)
Method:
- Pre-heat oven to 170˚C
- Chop or crush walnuts (if using)
- Chop butter into small cubes and place in a large bowl with white and brown sugars. With an electric beater, beat mixture until creamy
- Crack egg into a small bowl, add vanilla paste and lightly beat with a fork, add the egg to the creamed mixture and stir with a wooden spoon until combined
- Sift flour, cocoa, baking soda and salt over the mixture
- Add chocolate chips and walnuts if using and mix well
- Using a spoon, scoop golf ball sized portions of the mixture and place on a baking tray, about 5cm apart
- Bake in oven for 10 -12 minutes or until golden
- Remove biscuits and allow to cool on a wire rack
- Store in air tight container when cool.

These look so good. I didn’t know there was such a thing as gluten free self raising flour. I must look out for it so I can bake these biscuits when my GF friends are coming for afternoon.
