Flourless Chocolate Cake with Caramelised Bananas…
This is my take on Luke Magnan’s chocolate tart which we devoured for dessert while on the cruise. This recipe is quite easy and tastes delicious and is one I have made a thousand times over (well, maybe not a thousand!)…
Ingredients
⅓cup (35g) cocoa powder
⅓cup (80ml) hot water
150g dark chocolate, melted
150g unsalted butter, melted
1 cup (250g) brown sugar
1 ½ cup almond meal
1 tsp vanilla extract
5 eggs separated
4 bananas split in two lengthways
50g butter
Method
Preheat oven to 180˚C. Grease and line a 20cm round cake pan with baking paper.
In a large bowl combine the cocoa and water, stir until smooth. Add the cooled melted chocolate and butter, sugar, vanilla and almond meal and stir to combine. Add the egg yolks one at a time, stirring well after each addition.
Beat egg whites in a separate bowl with electric mixer until stiff peaks form. Fold them into the chocolate mixture in two batches.
Pour the mixture into the prepared tin and bake for 1 hour.
For the bananas, melt butter in a fry pan. Add bananas and cook until golden brown.
Serve cake with dusted cocoa, caramelised bananas and ice cream 🙂

I am not a fan of bananas but this looks tempting 🙂

You can omit the bananas and use berries or another fruit instead.The fruit sometimes balances the chocolate 🙂

Fresh berries always works, caramelised peaches or apricots would be nice too.
