Easy Bircher Muesli…

They say breakfast is the most important meal of the day!

While spending a delightful two days at ArtHouse B&B in New Zealand, we were spoilt with an amazing home-cooked breakfast by our lovely hosts.Fresh fruit, croissants, breads, eggs and cereals were on the menu, in addition to the delicious bircher muesli that was prepared with love the night before.

So, here is my version of Bircher Muesli, which is always prepared with love, and a few extra special ingredients I like to add along the way 😉

Bircher Muesli

Serves 4-6

*prepare night before

Ingredients

1 ½ cups rolled oats

¼ cup pepitas (pumpkin seeds)

¼ cup flaked almonds

½ tsp cinnamon

¼ cup sultanas

1 red apple peeled, cored and grated

1 tbsp honey

1 tbsp maple syrup

½ cup Greek yoghurt

½ cup almond milk

*fresh berries or fruit to serve

Method

Combine all ingredients together in a bowl and mix well.

Separate into serving size bowls or dishes and refrigerate overnight.

Enjoy with fresh berries or fruit served on top.
