Vietnamese Beef Salad

After an inspiring Foodie adventure in Hoi An, Vietnam, here is my version of an easy  Vietnamese Beef Salad. 

INGREDIENTS

  • 250 gm vermicelli noodles
  • Oil for frying
  • roasted peanuts to serve

Salad

  • ½ small red onion, thinly sliced
  • 2 Lebanese cucumbers, thinly sliced
  • 1 large carrot, thinly sliced
  • 1 cup each Vietnamese mint and coriander
  • 100 gm bean sprouts

Marinated Beef

  • 500 gm beef tenderloin, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 tsp sesame oil
  • 2 tsp honey

Dipping Sauce

  • 1 tbsp sugar
  • 2 tbsp lime juice
  • 2 tbsp white vinegar
  • 3 tbsp fish sauce
  • 1 small chopped chilli
  • 1 small clove garlic crushed
  • Small handful chopped coriander leaves

 

METHOD

  • For marinated beef, combine ingredients in a bowl.
  • Deep fry dry vermicelli noodles as per packet instructions
  • For the dipping sauce, combine ingredients in a bowl.
  • Combine all salad ingredients in a large bowl
  • In a large pan add a tablespoon of oil and when hot quickly stir-fry beef till just cooked. Remove from pan and set aside.
  • On serving plates, arrange fried noodles first, topped with salad. Place beef on top of the salad and sprinkle with peanuts. Drizzle dressing over and enjoy 😊
