After an inspiring Foodie adventure in Hoi An, Vietnam, here is my version of an easy Vietnamese Beef Salad.
INGREDIENTS
- 250 gm vermicelli noodles
- Oil for frying
- roasted peanuts to serve
Salad
- ½ small red onion, thinly sliced
- 2 Lebanese cucumbers, thinly sliced
- 1 large carrot, thinly sliced
- 1 cup each Vietnamese mint and coriander
- 100 gm bean sprouts
Marinated Beef
- 500 gm beef tenderloin, thinly sliced
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 1 tsp sesame oil
- 2 tsp honey
Dipping Sauce
- 1 tbsp sugar
- 2 tbsp lime juice
- 2 tbsp white vinegar
- 3 tbsp fish sauce
- 1 small chopped chilli
- 1 small clove garlic crushed
- Small handful chopped coriander leaves
METHOD
- For marinated beef, combine ingredients in a bowl.
- Deep fry dry vermicelli noodles as per packet instructions
- For the dipping sauce, combine ingredients in a bowl.
- Combine all salad ingredients in a large bowl
- In a large pan add a tablespoon of oil and when hot quickly stir-fry beef till just cooked. Remove from pan and set aside.
- On serving plates, arrange fried noodles first, topped with salad. Place beef on top of the salad and sprinkle with peanuts. Drizzle dressing over and enjoy 😊

I love Vermicelli bowls! I’ve never had it with dry crunchy noodles though, but it looks great!
