The perfect ratio of fudgy brownies….. quality chocolate, simple technique and an abundance of love
Read my previous post on Ratio Cocoa Roasters here. A unique chocolate boutique in Melbourne, that provided inspiration for this delicious recipe of fudgy bownies.
Ingredients
150g butter
100g dark cooking chocolate, chopped
⅔ cup plain flour, sifted
¾ cocoa, sifted
¾ cup brown sugar
¾ cup caster sugar
Pinch salt
1 tsp vanilla paste
3 large eggs
Method
Melt butter and chocolate together on low heat in a small saucepan. Set aside and let cool.
Preheat oven to 160˚C and line a square tin with baking paper.
Combine flour, cocoa, sugars and salt in a large mixing bowl.
Lightly beat eggs with vanilla paste in a separate bowl and add to cooled butter and chocolate mixture. Add this to the dry ingredients and gently stir until just combined.
Pour into the lined tin and bake for 15-18 minutes.

Oh my! These look amazing. ❤ I've never used vanilla paste in a recipe before, though! Is it similar to vanilla extract?

This looks delicious! I’m a sucker for chocolate. If you are too, I recommend folding in dark choc chips into the batter before baking. It makes it even chocolatier!
