Marmalade Cookies…

Michael Bond – A Bear called Paddington

 

Marmalade is Paddington’s favourite food. Spread in his sandwiches, this cute little bear is the happiest.

Here is my recipe for marmalade cookies, which I’m sure if Paddington Bear tried, he would love immensely!

 

Ingredients:

125g butter softened

1 cup caster sugar

2 eggs

3 tablespoons orange marmalade and extra for tops of cookies

1 teaspoon vanilla extract or essence

2½ cups plain flour

1 teaspoon baking powder

Pinch of salt

 

Method:

Pre heat oven to 180˚C.

Cream butter and sugar in a mixer until light and fluffy. Lightly beat eggs in a separate bowl and pour into butter/sugar mix and beat to combine.

Mix in orange marmalade and vanilla extract/essence.

Sift flour, baking soda and pinch of salt and incorporate into wet ingredients mixing until just combined.

Cover bowl with plastic wrap and place in the fridge for 1-2 hours to firm cookie dough.

Place walnut sized drops of dough onto a baking tray lined with baking paper. Using your thumb, lightly press down in the centre of the dough. Place ½ teaspoon of marmalade in the centre of the cookies and bake for 20 minutes or until golden brown.

Remove from tray and transfer to wire rack to cool.
