This is an easy Italian biscuit recipe, just in time for that Christmas baking!

Pistachio and Orange Biscotti…
Ingredients
60g butter, softened
400g Self-Raising Flour
250g Caster Sugar
2 whole eggs
2 egg yolks
Grated zest of one orange
a pinch of salt
200g pistachios
1 teaspoon of vanilla paste
3 tbsp Frangelico (or any other sweet liquor) optional
Method
Preheat oven to 180˚C.
Beat the caster sugar and butter in mixer. Add the eggs and vanilla paste and whip until pale and creamy. Then add the sifted flour, salt, orange zest and alcohol if using and mix till combined. Stir in the nuts.
Using floured hands, shape the dough on a floured workbench, into three sausage like shapes and bake them on trays lined with baking paper for 20 minutes. They will expand so don’t place too close together.
Let them cool slightly, then slice using a sharp knife.
Place the sliced biscuits back on the tray and into the oven and toast for 5 minutes.
You can substitute pistachios for any other nut.
I also like to use a combination of whole almonds and sultanas.

So, I want to trust you that these are easy, but i am sooo rubbish at cookies (apart from peanut butter cookies – for some reason they really do work!) Are they easy for kitchen failure, or just easy for super-stars-who-should-be-on-bake-off?

Haha… you make me laugh Josy. I’m sure you would be able to make these, they are pretty simple. Just add peanut butter if you like and pretend they are your cookies! Lol… 👍🏼😉

Oh we must be in tune! I made cantucci too, Christmas ones this time. They are so delicious and incredibly addictive. I will keep them for Christmas to be enjoyed with some sweet wine.. I love your recipe! Buon natale!
